South Pacific Memories is looking for an experienced Food & Beverage Manager to implement the restaurant operations of the business,

South Pacific Memories is a boutique resort and diving centre located in Vanuatu. Close to Port Vila, the capital, South Pacific Memories offers a private escape in paradise. Surrounded by soft white sand and beautiful coral reefs this is the resort you have dreamt of all your life.

The applicant will be in charge of the restaurant of the resort, and specifically:

Key Responsibilities

• Plan and execute all operational activities of the restaurant
• Operate the restaurant on the agreed budget
• Ensure expectation exceeding guest services
• Menu planning, developing, costing
• Oversee the operation of the different area of the restaurant (kitchen, dining, storage)
• Maintain excellent grooming standards
• Provide warm welcoming service to all guests
• Provide staff training
• Work close with the General Management to deliver the highest service
• Managing stocktake, food costing, wasting, stock rotation
• Maintain adeguate health and safety within the workplace
• Placing order with the local suppliers
• Work closely with the Chef for new recipes
• Managing bookings of visitors
• Organize functions and events

Qualifications and Requirements

• > 5 years experience in Hospitality Management positions or similar
• Fluency in verbal and written English along with French / Spanish / Italian
• Hospitality or Hotel Management Qualification
• Computer literate and experienced with Microsoft Excel and Accounting software
• High knowledge of international food industry
• Guest oriented with focus on personalized service
• Flexibility to respond to a range of different work situations
• Proficiency in using relevant software applications for inventory management / POS systems
• Ability to work under pressure in a diverse multicultural team
• Excellent grooming standards
• Comfortable to live and work on site
