RESTAURANT DIRECTOR

Set in the heart of Port Vila Harbour, Iririki Island Resort & Spa is one of the South Pacific’s most iconic destinations. We are seeking an enthusiastic and experienced Director of Restaurants to oversee our vibrant restaurant and bar operations and help us deliver unforgettable dining experiences.


About the Role


As Director of Restaurants, you’ll be the driving force behind our dining journey across multiple outlets, including Azure Restaurant, Sunset Bar & Grill, and Infinity Bar. From cultural nights and themed buffets to fine dining and cocktails by the pool, you’ll ensure every guest leaves with a lasting memory.

Reporting directly to the Director of Food & Beverage, you’ll lead and inspire a diverse team of 40+ associates, balancing warm island hospitality with operational excellence and strong financial performance. Success in this role means achieving high guest satisfaction, healthy profitability, and engaged, well-trained teams. This Position is 100% Hands On.

 

What We’re Looking For

  • Minimum 5 years’ experience in a senior leadership role (Director of Restaurants or F&B Manager).
  • Proven success managing high-volume, multi-outlet operations in luxury hotels or resorts. 
  • Strong 100% Hands-on Food Service experience with a can-do attitude
  • Financial acumen — skilled in budgeting, cost control, and driving revenue growth.
  • A confident leader with a passion for mentoring multicultural teams and developing future talent.
  • Creative flair to design and deliver memorable dining concepts, with a focus on local produce and cultural authenticity.
  • South Pacific or island resort experience is an advantage, but not essential.
